INTRODUCTION

 welcome you all in my food blog named as “Authentic UP cuisine”.

When I was 12 years old I was very fond of cooking so I used  to watch my mom cooking food from then I helped my mom for chopping vegetables , knowing flavours about food and slowly & steadily I learned to cook. First  I had cooked pakodas and potato fries and from then It became my hobby. & my love towards food increased. I love to cook and eat. Like how everyone love their own food like that I want that people should start knowing about UP food as well as my main aim for starting this blog is for people to move about UP cuisine and their love for UP food should also increase and they should also try out different UP food.

KATHAL KA KOFTA










INGREDIENT
  1. FOR THE JACK FRUIT KOFTAS

3 cups chopped and deseeded jackfruit
½ cups besan
1 tsp green chilli paste
2 tsp finely chopped ginger
Salt to taste
Oil for deep – frying

Other ingredient
2 tbsp oil
1 cup chopped onions
1 tbsp coriander powder
2 tsp chilli powder
1 tsp garam masala
¼ tsp turmeric powder
1 cup chopped tomatoes
Salt to taste
½ cup whisked curds
2 tbsp chopped coriander

For the garnish
1 tbsp chopped coriander

Method
For the jackfruit koftas
1. heat enough water in a deep non- stick pan. Add the jackfruit and salt, mix well and cook on a medium flame for 16 min or till they turn soft, while stirring it occasionally.
2. Drain the water using a strainer.
3. Transfer the jackfruit in a deep bowl and mash it using a potato masher.
4. Add the besan, green chilli paste, ginger and salt and mix very well to form a dough.
5. Divide the dough into 14 equal portions and shape each portion into a ball.
6. Heat the oil in a deep – fry, a few koftas at a time, on a medium flame till they turn golden brown in colour from all sides.
7. Drain on an absorbent paper and keep aside.

HOW TO PROCEED
  1. 1.       Heat the oil in a deep non-stick pan, add the onions and sauce on a median flame for 6 min.
  2. 2.       Add the coriander powder, chilli powder, garam masala and turmeric powder sauté on a medium flame for 1 min
  3. 3.       1Add the tomatoes and salt, mix well and cook on a medium flame for 3 min, while stirring occasionally.
  4. 4.       Add ¾ cup of water, mix well and cook on a medium flame for 5 min, while mashing it lightly with the back of a spoon.
  5. 5.       Switch of the flame, cool it slightly and blend it in a mixer till smooth.
  6. 6.       Transfer the mixture into the same deep non-stick pan, add ½ cup of water and curd, mix well and cook on a slow flame for 1 min, while stirring continuously.
  7. 7.       Add the prepaid jackfruit koftas, and coriander, mix gently, cover with a lid and cook on a medium flame for 2 min, while stirring it occasionally.
  8. 8.       Serve hot garnished with coriander.
